Okrbot23	I would wager to say that the coloration comes from the browining of the sugar in the marinade, although I can see "dark" grill marks, i'd only take off two points. and your scallions need to be rewashed. ick. Wednesday, October 19, 2005 8:59 PM
CallMeEleanor	Bite me. It's condensation on the scallions. And yes, it is MAPLE ginger salmon, so that's why it's brown. I think Jess was commenting on how white it was...well I seared it and then put it under the broiler so I could get the grill marks and still have it nice and tender.
